Cold Appetizers

 

Vegetable Brochettes ~ Fresh vegetables lightly poached then skewered and marinated. Colorfully displayed and complimented with a selection of savory sauces.


Poached Red Salmon Display ~ Finely poached red salmon surrounded by crumbled egg yolks and whites, capers, and brunoise red onion, and accompanied by fine caviar, parsley,
lemon wedges, and piped cream cheese. Served with gourmet crackers and lavash.

Scallion Prosciutto Roulade ~ Herbed cream cheese piped into rolled Prosciutto with a green onion sprig protruding to resemble a lollipop.


Canapés ~ There are literally hundreds of different kinds of canapés that can accompany any event. Traditionally they are made of pâté and garnished with various herbs, vegetables, and caviars. The pate' can be made from a variety of favorite foods which include, but are not limited to, salmon (or any fish), beef, pork, or vegetables. The canapés are served upon
various gourmet crackers, lavash and vegetable medallions.

Brie Wedges ~ Various French brie cut into wedges and placed on gourmet crackers, or alone and garnished with fresh fruits and berries.

Fresh Fruit and Berry Brochettes ~ Fresh premium seasonal fruits and berries, sliced and arranged on mini skewers, complimented with a touch of mint.
Asparagus Ties ~ Tender asparagus tips marinated with a medley of julienned vegetables, snuggly tied with a blanched chive. Served with various dipping sauces.


Caprese ~ Arranged slices of plum tomatoes and buffalo mozzarella, garnished with fresh basil, olive oil, and balsamic vinaigrette.
  Sushi ~ From California rolls to Calamari and everything in between. Prepared from the freshest sushi-grade seafood.
  Deli Meat / Finger Sandwiches ~ Either as a tray or display, these are always the first to go. Fresh roast beef, turkey breast, and baked ham with assorted cheeses make great little sandwiches or hoagie sub sandwiches. Can be served open face or in small rolls.
Tiered Displays ~ These are some of the more impressive centerpieces of any event, consisting of a selection of fresh fruit, imported and domestic cheeses, or a wide array of desserts. These towering works of art can reach over 36" in height. Selections may be customized to your specifications. Creatively carved vegetables in the shapes of local wildlife add the perfect garnish to these masterpieces.
